This Breakfast ‘Potato’ Skillet is a delicious low carb breakfast or brunch! Made with turnips instead of potatoes – so good!

Ingredients

  • 3 medium turnips, peeled and diced
  • 1 small green bell pepper, diced
  • 1 small yellow bell pepper, diced
  • 1 small red bell pepper, diced
  • 1 small onion , diced
  • 1 small Jalapeño Pepper, diced
  • 3 tbsps olive oil
  • 3/4 tsp paprika
  • 1/2 tsp onion powder
  • 1/2 tsp black pepper
  • 1/2 tsp chili flakes, optional
  • 1 stalk green onion, chopped
  • 3/4 tsp salt, more or less to taste
