  2. Choose similar sized potatoes so that they cook evenly. I like to use baby potatoes that just require to be cut in half, but you can use larger potatoes and cut them into quarters or 1-inch chunks.
  3. Don’t be tempted to add more oil, they just need a couple of tablespoons. The cornstarch helps achieve crispiness without excess oil.
