Instructions

  • Preheat your oven to 400°F (200°C). Line a 9×13 inch baking sheet with parchment paper and drizzle ½ tablespoon of olive oil over the paper. Set aside.
  • Wash and thoroughly dry the fingerling potatoes. Slice each potato in half lengthwise. Place them in a bowl and drizzle with the remaining olive oil, tossing to coat evenly.
  • In a separate medium bowl, combine the grated Parmesan cheese, dried oregano, onion powder, garlic powder, paprika, salt, and pepper. Mix well to create your seasoned cheese mixture.
  • Evenly spread the seasoned cheese mixture over the olive oil-drizzled parchment paper on your baking sheet. This forms the base for your crispy crust.
  • Carefully arrange the oiled potato halves, cut-side down, directly on top of the cheese mixture. Ensure the potatoes are in a single layer and not overcrowded.
  • Bake for 35-40 minutes, or until the potatoes are fork-tender and the cheese crust underneath is beautifully golden brown and crispy.
  • Remove from oven, let rest for a few minutes to allow the cheese to set. Garnish with fresh chopped parsley and serve immediately with sour cream or your favorite dip. Enjoy!
