Essential Ingredients for Perfect Mexican Street Corn
Crafting the perfect Elote starts with selecting the right ingredients. Here’s what you’ll need to bring this flavorful dish to life, along with tips for choosing the best quality components:

- Fresh Corn on the Cob: The star of the show! Opt for fresh, sweet summer corn, which is at its peak during grilling season. Look for husks that are tightly wrapped, vibrant green, and slightly damp. The kernels beneath should feel firm and plump when gently squeezed.
- Unsalted Butter: We recommend using unsalted butter to control the overall sodium content of the dish, especially since cotija cheese is naturally salty. Butter adds a rich, luscious base flavor to the grilled corn.
- Cotija Cheese: This traditional Mexican cheese, made from cow’s milk, is renowned for its salty, crumbly texture and robust flavor. It doesn’t melt easily, making it an ideal topping for Elote as it retains its shape and adds a delightful textural contrast. If cotija is unavailable, finely grated Parmesan or crumbled feta cheese can serve as suitable substitutes, offering a similar salty tang.
- Fresh Cilantro: Essential for a burst of fresh, herbaceous flavor and a vibrant pop of color. Always use fresh cilantro for the best results; dried cilantro simply won’t capture the same essence.
- Tajín Clásico Seasoning: This iconic Mexican spice blend is a cornerstone of Elote. Made from a combination of mild chili peppers, sea salt, and dehydrated lime, Tajín offers a unique tangy, salty, and subtly spicy kick that perfectly complements the sweetness of the corn and the creaminess of the sauce.
- The Creamy Sauce: The heart of Elote’s appeal lies in its rich, flavorful sauce. This decadent mixture typically includes Tajín, creamy mayonnaise, authentic Mexican-style cream (which is milder and less sour than sour cream), a pinch of salt, a dash of paprika for warmth and color, fresh chopped cilantro, and bright, zesty lime juice. Each component plays a crucial role in creating the sauce’s signature balance.
Mastering the Art of Mexican Street Corn: Step-by-Step Guide
Creating authentic Mexican Street Corn is a straightforward process that yields incredibly rewarding results. Follow these simple steps to prepare this beloved dish:

- Prepare Your Grill: Begin by preheating your outdoor grill to a medium heat setting. This ensures the corn cooks evenly and develops those desirable charred kernels without burning.
- Craft the Zesty Sauce: In a medium bowl, combine all the ingredients for the creamy Elote sauce: Tajín seasoning, mayonnaise, Mexican-style cream, salt, paprika, fresh chopped cilantro, and the juice from a fresh lime. Whisk everything together until the mixture is smooth and well combined. Cover the bowl and refrigerate the sauce until you are ready to use it. Chilling the sauce allows the flavors to meld beautifully.

- Grill the Corn to Perfection: Melt the unsalted butter. Carefully peel the husks from your corn cobs (if they haven’t been already). Brush each corn cob generously with the melted butter. Wrap each buttered cob individually in aluminum foil. Place the foil-wrapped corn on the preheated grill and cook for approximately 15-18 minutes, or until the kernels are tender and slightly blistered. Remember to rotate the cobs every 3-5 minutes to ensure even cooking and prevent any single side from burning. The foil helps steam the corn while it grills, keeping it moist and cooking it thoroughly.

- Assemble and Serve: Once grilled, carefully remove the corn cobs from the grill and unwrap them from the aluminum foil. Transfer them to a serving platter. Allow the cobs to cool for just a few minutes so they are easier to handle. Then, using a brush or spoon, generously coat each cob with the prepared creamy sauce mixture. For a truly authentic finish, sprinkle the coated corn with a liberal amount of crumbled cotija cheese, a final dusting of Tajín seasoning, and a scattering of fresh chopped cilantro or parsley. Serve your magnificent Mexican Street Corn immediately while it’s warm, and savor every glorious bite!

Expert Tips & Variations for Perfect Elote
Elevate your Mexican Street Corn experience with these helpful tips and creative variations:
- Always Opt for Fresh Lime Juice: The bright, zesty flavor of freshly squeezed lime juice is irreplaceable. Bottled lime juice often lacks the vibrant acidity and fresh aroma that makes the Elote sauce truly spectacular. Make sure to have a fresh lime on hand!
- Cotija Cheese Alternatives: If authentic cotija cheese is hard to find, don’t worry! Grated Parmesan cheese offers a similar salty and sharp profile, while crumbled feta cheese provides a delightful tang and creamy texture. Both are excellent substitutes that capture the essence of Elote.
- Grill-Free Options: No grill? No problem! You can still enjoy delicious Mexican Street Corn. Consider roasting your corn in the oven or even boiling it for a tender base. For detailed instructions on alternative cooking methods, refer to our guide on How to Cook Corn to find instructions for baked or boiled corn on the cob.
- Spice It Up: If you love a little extra heat, feel free to enhance the spice level. In addition to Tajín, a sprinkle of chili powder, a dash of cayenne pepper, or a finely minced jalapeño added to the sauce can provide an exciting kick. Adjust to your personal preference!
- The Importance of Mayonnaise: Do not skip the mayonnaise in the sauce! It serves as the essential creamy base, binding all the flavors together and providing that luxurious, smooth texture. Contrary to some misconceptions, quality mayonnaise, when used in moderation and made with simple ingredients, is a perfectly healthy component of this dish. Look for brands without unnecessary filler ingredients.
- Make it Esquites: For a spoon-friendly version, consider making Esquites! After grilling or cooking the corn, carefully cut the kernels off the cob and mix them directly with the sauce and toppings in a bowl. Serve warm with a spoon, perfect for parties or when you want to avoid messy cobs.
- Advance Preparation: The sauce can be made a day in advance and stored in the refrigerator. This allows the flavors to deepen and makes assembly on the day of serving quick and easy. Simply prepare your corn and then dress it just before eating.

Frequently Asked Questions About Mexican Street Corn
For the best corn, gently squeeze the corn on the cob; it should feel firm and plump, indicating juicy kernels. The husk of fresh corn should be tightly wrapped around the cob, have a bright green color, and feel slightly damp. Avoid any cobs with husks that are dry, pale, or have brown holes, as these can indicate older corn or insect damage.
The most efficient way to shuck corn is to grab the very top end of the husk and silk. You can then split the top side of the husk in half and peel the husk and silk downward towards the stem, much like peeling a banana. This motion helps to remove most of the silk along with the husk.
While you can grill corn directly, wrapping it in aluminum foil offers several benefits. The foil acts as a protective barrier, shielding the corn from direct, intense heat and helping it to cook more evenly without charring too quickly or burning. It also steams the corn slightly, resulting in a tender and juicy outcome while still allowing for some smoky flavor to infuse. If you prefer a more pronounced char, you can unwrap the corn for the last few minutes of grilling.
To best preserve leftovers, it’s ideal to only top the corn with sauce and cheese right before serving. If you do have some already topped Elote left uneaten, simply place it in an airtight container. Store it in the refrigerator for up to 3 days. To reheat, you can bake the corn in a 350°F (175°C) oven until it’s warmed through, or microwave it for a quicker option. For untopped grilled corn, storing it without the sauce will help it stay fresh longer.
Absolutely! To make vegan Mexican Street Corn, substitute the mayonnaise with a high-quality vegan mayonnaise. For the Mexican-style cream, use a vegan sour cream alternative. Instead of cotija cheese, opt for a vegan Parmesan or a homemade cashew-based “queso fresco” crumble. The rest of the ingredients, such as corn, butter (use vegan butter), cilantro, Tajín, paprika, salt, and lime juice, are typically vegan-friendly.

4 servings
Ingredients
- 4 cobs sweet corn, peeled
- 3 tbsps. butter, melted
- ¼ cup cotija cheese, grated
- chopped cilantro, optional for garnishing
- Tajín seasoning, for garnishing, optional
Sauce
- ¾ tsp. Tajín seasoning
- 3 tbsps. mayonnaise
- 3 tbsps. Mexican-style cream
- ½ tsp. salt
- ½ tsp. paprika
- 2 tbsps. chopped cilantro
- ½ whole lime, juiced, about 1 tablespoon
Instructions
-
Preheat the grill to medium heat.
-
Mix together all the sauce ingredients in a bowl and set it aside in the fridge until ready to use.
-
Melt the butter and brush it over the corn cobs. Wrap each cob individually in aluminum foil and grill for about 15-18 minutes, or until the cobs are tender and slightly blistered. Flip them around every 3-5 minutes to ensure even cooking.
-
Remove the corn from the grill and carefully unwrap them. Transfer the cooked cobs to a plate. Allow them to cool for a few minutes to make them easier to handle. Then, brush the prepared sauce mixture generously onto each cob.
-
Top the sauced corn with crumbled cotija cheese, an additional sprinkle of Tajín seasoning, and fresh chopped cilantro or parsley. Serve immediately and enjoy the vibrant flavors.
Notes
- I recommend using fresh lime juice as bottled lime juice just doesn’t taste as fresh!
- If cotija isn’t available, you can swap for grated Parmesan or crumbled feta cheese instead.
- If you don’t have a grill, you can bake the corn instead. Check out my post on How to Cook Corn to find the instructions for baked corn on the cob.
- Make this a little spicier by adding some chili powder on top of using Tajín!
- Don’t skip the mayo. It acts as the base of a creamy dressing. While some may think mayo is unhealthy, it really isn’t! Make sure to use a mayo without filler ingredients.
