This Potato Cobb Salad is so easy to make and very filling. All you need is a few simple ingredients. Can also be made vegetarian.

  • 1 small head of romaine lettuce, chopped
  • 2 corn, cooked and cut off cobb
  • 1/2 cup green onion, chopped
  • 1 1/2 cups vine tomato, quartered
  • 4 small golden potatoes, boiled
  • 4 eggs, boiled
  • Fresh cracked black pepper
  • 2 slices of turkey bacon, cooked and chopped (optional)

DRESSING:

  • 1/3 cup light mayo
  • 1 lemon, juiced
  • 3/4 tsp. salt
  • 3 tbsps. olive oil
  • 1 tbsp. fresh parsley, chopped
  • 1 large garlic clove, minced

Instructions

  • Wash and cook the potatoes and eggs until tender.
  • Boil the corn cobs and then carefully cut the kernels off the cob. Alternatively, use canned corn.
