Essential Ingredients for Your Low Carb Chicken Parmesan

Crafting the perfect low-carb chicken parmesan requires a selection of fresh, high-quality ingredients that build layers of flavor. Here’s a closer look at what you’ll need and why each component is vital:

Ingredients needed to make low carb chicken parmesan.
  • Olive Oil: A staple in Italian cooking, olive oil provides a wonderful base for sautéing and searing. Its rich, fruity notes enhance the overall flavor profile. While extra virgin olive oil is preferred for its taste and health benefits, you can opt for a lighter olive oil or even avocado oil if you prefer a higher smoke point or a different flavor.
  • Onion: A medium yellow onion, finely chopped, forms the aromatic foundation of our homemade marinara sauce. Sautéing the onion until translucent releases its natural sweetness, adding depth and complexity to the sauce. While yellow onion is my go-to, red or white onions can also be used, each offering a slightly different nuance.
  • Garlic: Fresh garlic is absolutely crucial here. Minced fresh garlic imbues the sauce with an unparalleled pungent and savory flavor that pre-minced or powdered garlic simply cannot replicate. Aim for at least a teaspoon, or more if you’re a garlic lover!
  • Tomatoes: Our robust marinara sauce gets its body and vibrant flavor from a combination of tomato paste and canned crushed tomatoes. Tomato paste provides concentrated tomato essence and a thick consistency, while crushed tomatoes deliver that rich, ripe tomato taste and texture that defines a great sauce. Ensure you choose good quality canned tomatoes for the best results.
  • Seasoning: The heart of any Italian dish lies in its seasoning. This low carb chicken parmesan recipe calls for a generous blend of Italian seasoning, which typically includes basil, oregano, rosemary, and thyme. A pinch of red chili flakes adds a subtle warmth and kick, while salt, black pepper, paprika, and onion powder round out the flavors, creating a perfectly balanced and savory profile for both the chicken and the sauce.
  • Sugar: Just a small amount of sugar is added to the marinara sauce, not to make it sweet, but to cut through the acidity of the tomatoes and balance the overall flavor. It’s a classic Italian trick that enhances the natural sweetness of the tomatoes and creates a more harmonious sauce.
  • Fresh Basil: Fresh herbs elevate any dish, and basil is paramount in Italian cuisine. Roughly chopped fresh basil leaves stirred into the simmering sauce and used as a garnish adds a bright, aromatic freshness that ties all the flavors together beautifully. Don’t skip the fresh basil if possible, as it makes a significant difference.
  • Chicken Breasts: We use boneless, skinless chicken breasts for this recipe. They cook quickly and are a lean protein source, fitting perfectly into a low-carb diet. For best results, consider pounding the thicker parts of the chicken breasts to an even thickness (about ½-¾ inch) to ensure they cook uniformly and remain tender.
  • Mozzarella Cheese: What’s chicken parmesan without the melty cheese? Shredded mozzarella cheese is the star here, providing that signature gooey, stretchy texture and mild, creamy flavor that perfectly complements the savory chicken and rich marinara. For the absolute best melt and flavor, freshly shredded whole milk mozzarella is highly recommended over pre-shredded varieties, which often contain anti-caking agents.

Mastering Your Low Carb Chicken Parmesan Skillet: A Step-by-Step Guide

Creating this irresistible Low Carb Chicken Parmesan Skillet is a straightforward and rewarding process. Follow these detailed steps to achieve a perfectly cooked, flavor-packed meal that will impress everyone.

  • Prepare for Baking: Begin by preheating your oven to a steady 450 degrees Fahrenheit (230 degrees Celsius). This ensures the oven is at the correct temperature when your skillet is ready to go in, promoting even cooking and a beautifully melted cheese topping.
  • Expertly Season the Chicken: Lay your boneless, skinless chicken breasts on a clean cutting board. Pat them thoroughly dry with paper towels – this is crucial for achieving a good sear. Generously season both sides of each chicken breast with the carefully measured paprika, onion powder, Italian seasonings, salt, and freshly ground black pepper. Ensure an even coating for maximum flavor. If your chicken breasts are very thick, consider pounding them slightly to an even thickness (about ¾ inch) to ensure they cook through evenly and quickly.

  • Achieve the Perfect Sear: Place an oven-proof skillet (cast iron or stainless steel works best) over a medium-high flame. Add a tablespoon of olive oil and let it heat until shimmering, but not smoking. Carefully place the seasoned chicken breasts into the hot skillet, ensuring not to overcrowd the pan (cook in batches if necessary). Sear each side for 4-5 minutes, or until a beautiful golden-brown crust develops. This searing step is vital as it locks in juices and adds a depth of flavor that baking alone cannot provide. Once seared, remove the chicken from the skillet and transfer it to a clean plate; it will finish cooking in the oven later.

  • Craft the Marinara Sauce: Using the *same* skillet (don’t clean it, those browned bits are flavor!), add another tablespoon of olive oil if needed. Reduce the heat to medium. Add the chopped yellow onion and minced garlic to the skillet. Sauté gently for 2-3 minutes, stirring occasionally, until the onions become translucent and fragrant. This process softens the aromatics and releases their sweet, savory notes. Next, stir in the tomato paste, crushed tomatoes, Italian seasonings, a pinch of sugar, red chili flakes, salt, and black pepper. Mix thoroughly to combine all the ingredients.
  • Simmer for Depth of Flavor: Bring the sauce to a gentle simmer, then reduce the heat to low. Let the marinara sauce cook for 10-15 minutes, allowing the flavors to meld and deepen, and for the sauce to thicken slightly. Stir occasionally to prevent sticking. Towards the end of the simmering time, remove the skillet from the heat and stir in the fresh basil leaves. Their fresh aroma will infuse the hot sauce beautifully. Remember to reserve about ½ cup of this delicious marinara sauce on the side; you’ll use it for a final touch on the chicken.

  • Assemble the Skillet Layers: Now it’s time to bring it all together. Carefully transfer the seared chicken breasts back into the skillet, nestling them into the prepared marinara sauce. Ensure they are partially submerged but not completely covered, allowing them to absorb the rich flavors. Spoon about 2 tablespoons of the reserved marinara sauce evenly over the top of each chicken breast. Finally, generously sprinkle the shredded mozzarella cheese over each chicken breast, ensuring every piece is beautifully covered, ready for a glorious melt.

  • Bake to Perfection: Carefully transfer the skillet into your preheated oven. Bake for 20-30 minutes. The exact baking time will depend on the thickness and size of your chicken breasts and how thoroughly they were seared. The key indicators for doneness are that the cheese is gloriously melted, bubbly, and slightly golden, and the chicken is cooked through. To be absolutely certain, use a meat thermometer inserted into the thickest part of the chicken; it should read an internal temperature of 165°F (74°C).
  • Garnish and Serve: Once baked, remove the skillet from the oven and let it rest for a few minutes. This allows the juices in the chicken to redistribute, ensuring maximum tenderness. Before serving, garnish your magnificent chicken parmesan with a sprinkle of fresh basil leaves for a final flourish of color and aroma. Serve directly from the skillet or transfer to individual plates.

Pro Tips for the Ultimate Skillet Parmesan Chicken

Achieving a restaurant-quality Low Carb Chicken Parmesan at home is easier than you think, especially with these expert tips:

  • Marinara Sauce Shortcuts: While making your own marinara from scratch is recommended for the freshest flavor, you can absolutely use a high-quality jarred marinara sauce to save time. When choosing a jarred sauce, check the label for added sugars and select one with minimal ingredients to keep it low-carb and full of authentic flavor.
  • Preventing Dry Chicken: The key to tender, juicy chicken parmesan is to avoid overcooking. Always use a reliable cooking thermometer to check the internal temperature of the thickest part of the chicken. The chicken is perfectly cooked when it reaches 165°F (74°C). Pull it from the oven as soon as it hits this mark to prevent it from drying out.
  • The Garlic Advantage: For the most robust and aromatic marinara, always opt for freshly minced garlic over pre-minced garlic from a jar. Fresh garlic releases potent oils and flavors that greatly enhance the depth of your sauce.
  • Superior Cheese Melt: While convenient, pre-shredded mozzarella cheese often contains anti-caking agents like cellulose, which can prevent it from melting as smoothly and evenly as desired. For that perfect, gooey, bubbly cheese pull, invest in a block of whole milk mozzarella and shred it yourself just before use.
  • Searing Smart: When searing your chicken breasts, resist the urge to move them around frequently. Allow them to cook undisturbed for the recommended time on each side. This crucial step allows a beautiful, flavorful crust to form, sealing in juices and contributing significantly to the overall texture and taste. Moving them too soon can slow down the browning process and even risk tearing the chicken.
  • Skillet Alternatives: If you don’t possess an oven-safe skillet, simply transfer your seared chicken and marinara sauce to a lightly greased baking dish before layering with cheese and baking. The end result will be just as delicious, though you might miss out on a little bit of that rustic skillet charm.
  • Pound for Evenness: For consistently cooked and tender chicken, especially with thicker chicken breasts, place them between two sheets of plastic wrap and gently pound them with a meat mallet or rolling pin until they are of uniform thickness (around ¾ inch). This ensures they cook evenly and quickly, preventing some parts from drying out while others are still cooking.
  • Season Generously: Don’t be shy with your seasonings. Chicken breasts can be bland on their own, so a generous hand with salt, pepper, and Italian herbs before searing is vital for building a strong flavor base.
  • Rest Your Chicken: After baking, let the chicken parmesan rest in the skillet for 5-10 minutes before serving. This allows the juices to redistribute throughout the chicken, resulting in a more tender and moist final product.

Frequently Asked Questions About Low Carb Chicken Parmesan Skillet

Here are some common questions about making and enjoying your Low Carb Chicken Parmesan Skillet:

How do I store leftover chicken parmesan?

Storing leftovers is simple. Allow the chicken parmesan to cool completely, then transfer it to an airtight container. It can be safely stored in the refrigerator for up to 5 days. When reheating, gently warm it on the stovetop over low heat with a lid to retain moisture, or in the microwave in short bursts until heated through. You can also reheat it in the oven at a lower temperature (around 300°F/150°C) until warm, though be cautious not to overcook the chicken and dry it out.

Can I freeze chicken parmesan?

Yes, chicken parmesan freezes beautifully! Once cooled, transfer individual portions or the entire dish (if using a freezer-safe container) to a freezer-safe bag or airtight container. It can be stored in the freezer for up to 3 months. For best results, thaw the chicken parmesan overnight in the refrigerator before reheating gently using the methods described above. Freezing is a fantastic way to prepare meals ahead for quick weeknight dinners.

Can I use chicken thighs instead of breasts?

Absolutely! You can easily swap boneless, skinless chicken breasts for boneless, skinless chicken thighs if you prefer. Chicken thighs tend to be more forgiving and retain more moisture, offering a richer flavor profile. Keep in mind that chicken thighs might require slightly different searing and baking times due to their thickness and fat content. Ensure they reach an internal temperature of 165°F (74°C).

What’s the difference between chicken parmesan and chicken parmigiana?

The good news is, there’s no difference at all! Chicken parmesan and chicken parmigiana are simply two different names for the exact same classic Italian-American dish. “Parmigiana” is the traditional Italian term, while “parmesan” is the Anglicized version, commonly used in North America. No matter what you call it, it’s equally delicious!

Why does chicken parm use mozzarella?

Mozzarella cheese is absolutely essential for chicken parmesan because of its unparalleled melting properties and mild, creamy flavor. It creates that iconic gooey, stretchy layer that we all love, perfectly balancing the acidity of the marinara and the savory chicken. While other cheeses like provolone or fontina could be used for flavor variation, mozzarella delivers the traditional texture and appeal that makes chicken parm so beloved. You definitely don’t want to skip it for this recipe!

What to serve with low carb chicken parmesan?

This low-carb chicken parmesan is a complete meal on its own, but it pairs wonderfully with a variety of low-carb sides to create a well-rounded dinner. Consider serving it with some Low Carb Garlic Bread or Cheesy Cauliflower Breadsticks to mop up that delicious sauce. For vegetable options, a simple side salad with a light vinaigrette, roasted asparagus, sautéed zucchini, or steamed green beans would be excellent choices. You could also serve it with spiralized zucchini noodles or cauliflower rice for a pasta-like experience without the carbs. For a twist, my Crispy Air Fryer Potatoes or Crispy Potato Wedges (in moderation if strictly keto) could add a delightful textural contrast.

Made with chicken breasts, homemade marinara sauce, and a layer of melty cheese, this Low Carb Chicken Parmesan Skillet comes together quickly and easily for a delicious weeknight dinner. Filling, hearty, and tasty, your whole family will love it.
Prep Time: 10 minutes
Cook Time: 45 minutes
Total Time: 55 minutes
Servings: 4 servings

Ingredients

To prepare marinara sauce

  • 2 tablespoon olive oil
  • 1 medium yellow onion, chopped
  • 1 teaspoon garlic, minced
  • ¼ cup tomato paste
  • 28 oz. can crushed tomatoes
  • 1 teaspoon Italian seasonings
  • 1 teaspoon sugar
  • 1 teaspoon red chili flakes
  • 1 tsp salt & pepper
  • ¼ cup fresh basil, roughly chopped

To prepare chicken parmesan

  • 4 whole boneless skinless chicken breasts
  • ½ teaspoon paprika
  • ½ teaspoon onion powder
  • 1 teaspoon Italian seasonings
  • ½ teaspoon salt
  • ½ teaspoon ground pepper
  • 1 tablespoon olive oil
  • 1 cup shredded mozzarella cheese
  • Fresh basil, to serve

Instructions

  • Preheat the oven to 450 degrees F.
  • Season the chicken with paprika, onion powder, Italian seasonings, salt and pepper.
  • Heat an oven proof skillet on a medium flame, add olive oil and sear the chicken breast on both sides for 4-5 minutes. Then set aside on a plate.
  • In the same skillet, prepare the marinara sauce: Heat a saucepan with olive oil, add yellow onion and garlic. Sauté for 2-3 minutes until onions turn translucent.
  • Add in the tomato paste, crushed tomatoes, Italian seasonings, sugar, red chili flakes, salt and pepper. Let the sauce simmer for 10-15 minutes until the sauce thickens a bit. Remove the saucepan from the heat and add the fresh basil leaves and mix together. Remove ½ cup of marinara sauce and set aside.
  • Transfer the chicken breast back to the skillet on the of prepared marinara sauce. Spread about 2 tablespoons of marinara sauce over each chicken breast. Top with mozzarella cheese evenly over the chicken breast.
  • Place the skillet in the oven and bake for 20-30 minutes (depending on the size of your chicken) until the cheeses are melted and chicken is cooked through at an internal temperature of 165 F.
  • Garnish the chicken parmesan with fresh basil and serve.

Notes

  • You can use jarred marinara sauce if you prefer to save some time. Try to find a high-quality jarred sauce for the best flavor if you are not making your own.
  • Do not over cook the chicken so you don’t end up with dry chicken. Always use a cooking thermometer to check the internal temperature of the chicken. It should be at 165 F.
  • Use freshly minced garlic. It brings out so much flavor compared to pre-minced garlic.
  • Freshly shredded mozzarella cheese is preferred to the cheese sold in a bag. Pre-shredded cheeses have an anti-caking agent added that prevents them from melting as well.
  • When searing the chicken, don’t move the chicken around too much as it’ll slow down the searing process and you risk ripping the chicken.
  • If you do not have an oven-safe skillet, transfer the chicken to a greased baking dish to bake.
