Welcome to the enchanting world of Middle Eastern desserts, where delicate flavors and intricate textures create unforgettable culinary experiences. Among the pantheon of beloved sweets, Bird Nest Baklava stands out as a true masterpiece—an elegant, crunchy, and irresistibly delicious treat that is surprisingly simple to create at home. Known in Arabic as Osh El Bulbul, meaning “nightingale’s nest,” this dessert perfectly mimics the delicate structure of a bird’s nest, cradling bright green pistachios within its golden, shredded phyllo strands. Each bite offers a delightful crunch followed by the rich nuttiness of pistachios, all enveloped in the sweet embrace of simple syrup. It’s a perfect bite-sized indulgence, ideal for entertaining, holidays, or simply elevating your everyday dessert experience.

While various forms of baklava are cherished across the Middle East, North Africa, and the Balkans, Bird Nest Baklava holds a special place in the culinary traditions of the Levant, particularly in Syria, Lebanon, Palestine, and Jordan. Its unique preparation using shredded phyllo dough, also known as kataifi, gives it a distinct light and airy texture that sets it apart from its layered counterparts. Unlike some heavier pastries, Osh El Bulbul is remarkably delicate, allowing you to enjoy several pieces without feeling overwhelmed. This lightness contributes to its widespread appeal and makes it a festive favorite for gatherings and celebrations throughout the region. The captivating circular form and the golden-brown hue, reminiscent of a real bird’s nest, make it a visually stunning dessert that often becomes the centerpiece of any sweet spread.

Essential Ingredients for Bird Nest Baklava
Crafting the perfect Bird Nest Baklava requires a few key ingredients, each playing a crucial role in achieving its signature flavor and texture. Quality ingredients truly make a difference in the final outcome.

- Kataifi Shredded Phyllo Dough: This is the star of our dessert. Kataifi, sometimes spelled kadaif, consists of very fine, thread-like strands of phyllo dough. It’s what gives Bird Nest Baklava its unique, crispy texture and nest-like appearance. You can typically find kataifi in the frozen pastry section of most Middle Eastern or Mediterranean grocery stores. It’s crucial to thaw the dough properly; either transfer it to the refrigerator a day before you plan to bake or let it sit at room temperature for a couple of hours until it’s pliable and easy to work with. Do not try to separate it when frozen, as it will break.
- Ghee (Clarified Butter): Ghee is an integral component in Middle Eastern sweets, prized for its rich, nutty flavor and higher smoke point compared to regular butter. It contributes significantly to the baklava’s golden color and exceptional crispiness. While you can purchase high-quality, grass-fed ghee from specialty stores, making your own homemade ghee is also a rewarding option that ensures purity and freshness. Click here for my easy homemade ghee recipe. If ghee is unavailable, unsalted butter can be clarified at home as a substitute, though it might impart a slightly different flavor profile.
- Simple Syrup (Ater or Sharbat): This sweet, fragrant syrup is poured over the hot baklava after baking, infusing it with moisture and sweetness. The simple syrup is traditionally made from sugar, water, and often flavored with a hint of lemon juice or rose water/orange blossom water. Preparing the syrup in advance is essential so it has time to cool completely before being used. A cool syrup poured over hot baklava helps create the perfect crunchy yet tender texture. - Whole Pistachios: The vibrant green pistachios not only add a beautiful pop of color but also contribute a distinctive, slightly salty, and earthy flavor that perfectly complements the sweet baklava. While raw, shelled whole pistachios are generally preferred for their fresh taste and crisp texture, roasted pistachios also work wonderfully if that’s what you have on hand. Ensure they are unsalted to control the overall sweetness of the dessert.
Crafting Your Own Bird Nest Baklava: A Step-by-Step Guide
Making Bird Nest Baklava is a delightful culinary adventure. Follow these instructions carefully to create a batch of perfectly crunchy, sweet, and visually stunning treats.
- Prepare the Dough: The night before you plan to bake, transfer your kataifi shredded phyllo dough from the freezer to the refrigerator to thaw slowly. Alternatively, you can let it sit at room temperature for two to three hours. The dough needs to be completely defrosted and pliable for easy handling.
- Make the Simple Syrup: This crucial step should always be done first. Prepare your simple syrup according to your preferred recipe (like my Lebanese Simple Syrup) and set it aside to cool completely while you prepare the baklava nests. Pouring cool syrup over hot baklava is key to achieving that desirable crisp texture.
- Preheat Your Oven: Set your oven to 350°F (175°C) and allow it to fully preheat while you assemble the nests. A consistently hot oven ensures even baking and a beautiful golden-brown finish.
- Form the Bird Nests: Gently pull a portion of the kataifi dough, about ½ inch thick and approximately 10-12 inches long, from the main bundle. Take one end of the strand and begin wrapping it around two fingers (your index and middle finger) to create a small, tight coil. As you wrap, gently form the dough into a circular nest shape, ensuring there’s a small indentation in the center. Make sure to leave enough room in the middle to comfortably place 4-5 whole pistachios later. The goal is a compact yet delicate nest.

- Arrange in the Pan: As you form each bird nest, carefully place it into a 9×11 inch baking pan. Arrange them snugly next to each other, but avoid overcrowding, as they will expand slightly during baking. You will find that approximately half of a standard 16 oz package of kataifi dough is sufficient to fill a pan of this size.

- Add the Pistachios: Once all your nests are formed and arranged in the pan, carefully place 4-5 whole pistachios into the center of each nest. This not only adds flavor but also helps maintain the nest’s shape during baking.
- Melt the Ghee: Measure out ¾ cup of ghee. Gently melt the ghee either in a microwave-safe measuring cup (about 30-45 seconds) or in a small saucepan over low heat on your stovetop. The ghee should be fully liquid but not boiling hot.

- Pour Over Ghee: Carefully and evenly pour the melted ghee over each individual nest in the baking pan. You can use a spoon to drizzle it precisely, ensuring every strand of kataifi is coated. This step is crucial for achieving that characteristic golden crispness.
- Bake to Golden Perfection: Place the baking tray on the middle rack of your preheated 350°F (175°C) oven. Bake for approximately 30-35 minutes, or until the nests turn a beautiful golden brown color. Keep a close eye on them, as baking times can vary slightly depending on your oven. You want them golden, not burnt.
- Syrup Infusion: As soon as the nests emerge from the oven, hot and golden, immediately pour ¾ to 1 cup of the cooled simple syrup evenly over them. The amount of syrup can be adjusted to your preference; use less for a slightly less sweet dessert, or more for a richer, sweeter experience. The sizzling sound as the syrup hits the hot baklava is a sign of success!

- Cool and Garnish: Allow the Bird Nest Baklava to cool completely in the pan before attempting to move them. This cooling period allows the syrup to fully absorb and the nests to firm up, preventing breakage. Once cooled, you may optionally garnish them with a sprinkle of finely ground pistachios for an extra touch of color and flavor.
- Serve and Enjoy: Carefully transfer the cooled baklava nests to a serving platter. They are now ready to be enjoyed!

Expert Tips for Perfect Osh El Bulbul
Achieving baklava perfection is all about attention to detail. These tips will help you create the most exquisite Osh El Bulbul:
- Syrup First, Always: Always prepare your simple syrup well in advance. It must be completely cool when poured over the hot baklava. This temperature contrast is vital for preventing the baklava from becoming soggy and ensuring a crispy finish.
- Hot Oven is Key: Ensure your oven is fully preheated to the specified temperature (350°F or 175°C) before placing the baklava inside. A hot oven facilitates rapid expansion and crisping of the dough.
- Proper Dough Thawing: Thaw the kataifi dough in the refrigerator overnight or on the counter for a couple of hours. Attempting to work with partially frozen or stiff dough will result in breakage and frustration. It should be soft and pliable.
- Uniform Nest Size: Try to keep your bird nests roughly the same size and thickness. This ensures they cook evenly, preventing some from being undercooked while others are over-browned. Consistency is crucial for a professional look and feel.
- Pistachio Power: Opt for raw, whole pistachios if you can find them. Their flavor is fresher and they retain a better crunch after baking. If raw aren’t available, roasted, unsalted pistachios are an excellent alternative.
- Sweetness to Taste: The amount of simple syrup can be adjusted to your personal preference. If you like your baklava very sweet, use the full amount or even a little more. For a less sweet version, reduce the quantity slightly.
- Watch the Bake: Do not overcook your nests. You want them to achieve a beautiful, even golden-brown color, as shown in the photos, not a dark brown or burnt hue. Keep an eye on them, especially during the last 10 minutes, as ovens can vary.
- Gentle Dough Handling: Kataifi dough is delicate. Handle it gently to avoid tearing the fine strands. If it dries out while you’re working, cover the unused portion with a damp cloth.
- Even Ghee Distribution: Make sure the melted ghee is drizzled evenly over every nest. Ghee is essential for both flavor and that irresistible golden crispiness.
Serving and Storage Suggestions
Bird Nest Baklava is best enjoyed at room temperature, allowing its flavors to fully develop. Serve them individually on a platter, perhaps alongside a cup of strong Arabic coffee or tea, for a truly authentic experience. For an extra touch of elegance, you can garnish them with a light sprinkle of crushed pistachios just before serving. These delicious sweets make excellent gifts and are perfect for sharing during festive occasions or as a thoughtful gesture.
To store your Bird Nest Baklava, place them in an airtight container at room temperature. They will remain fresh and crispy for up to a week. Avoid refrigerating baklava, as the cold can cause the syrup to crystallize and the dough to become somewhat soggy, compromising its delicate texture. If you wish to store them for longer, they can be frozen for up to 2-3 months in a freezer-safe container. Thaw them at room temperature before serving.
Delicious Variations to Try
While the classic pistachio Bird Nest Baklava is perfection, don’t hesitate to experiment with different nuts or flavorings to customize this delightful dessert:
- Walnut Bird Nests: Substitute the pistachios with finely chopped walnuts for a richer, earthier flavor. Walnuts are a traditional filling in many baklava varieties.
- Almond Bird Nests: Use whole blanched almonds for a milder, slightly sweet flavor and a different textural contrast.
- Mixed Nuts: Create a blend of pistachios, walnuts, and almonds for a complex and satisfying filling.
- Spice it Up: Infuse your simple syrup with cinnamon sticks, cardamom pods, or a few cloves for added aromatic depth.
- Citrus Zest: Add orange or lemon zest to the simple syrup or directly to the melted ghee for a bright, refreshing twist.

Pistachio Bird Nest Baklava
By: Mariam Ezzeddine
This delicious Bird Nest Baklava is made with finely shredded phyllo dough, filled with pistachios and baked to a golden brown color then soaked with simple syrup.
Prep Time: 30 minutes
Cook Time: 30 minutes
Servings: 56 Pieces
Ingredients
- 16 oz. kataifi shredded phyllo dough, thawed
- ¾ cup ghee, melted
- ½ cup whole pistachios, preferably raw or roasted
- ¾ cup simple syrup
- 2 tbsps crushed pistachio, optional for garnishing
Instructions
- Thaw the dough the night before in your fridge or a couple of hours at room temperature before starting.
- First, prepare the Simple Syrup so that it cools down before the nests are baked.
- Preheat oven to 350 F (175°C).
- To assemble the bird nest, pull a 1/2 inch thick string of dough and fold with your fingers in the center, forming a nest shape. Make sure you leave enough room in the center to add at least 4-5 pistachios.
- Repeat this procedure to form the rest of the nests. Add them to the pan as you go. You will need only half the dough to make enough for a 9×11 inch pan.
- When you are done forming all the nests, add 4-5 pieces of pistachios into each nest.
- In a measuring cup, measure 3/4 cup of ghee. Place it in the microwave and melt it (about 30 seconds) or do it on your stovetop over low heat.
- Pour the melted ghee carefully onto each nest. You can also use a spoon to do so evenly if you like.
- Bake in a preheated 350 F (175°C) oven for 30-35 minutes, or until they are golden brown. Baking time will vary per oven, so keep an eye on them. Always place the tray on the middle rack.
- When the nests are golden brown, remove them from the oven and pour 3/4-1 cup (depending on how sweet you want them) of cool simple syrup evenly over the nests.
- Allow them to cool completely before serving. Garnish with ground pistachio. (optional)
- Transfer them to a platter when ready to serve.
Notes
- Always prepare the simple syrup ahead of time to ensure it is cool.
- Use a preheated oven for even baking.
- Thaw the kataifi dough in the fridge the night before, or on the counter a couple of hours prior to use.
- Keep the nests consistently sized so that they cook evenly.
- Use raw whole pistachios if possible; otherwise, roasted ones work well.
- Adjust the amount of simple syrup based on your sweetness preference.
- Do not overcook the nests; aim for a beautiful golden brown color, not too dark.
